No Bake sweet potato brownies

Heya beautiful humans and welcome to my delicious sweet potato brownie recipe. This recipe doesn’t require baking and can take as little as 30 minutes of your busy schedules. So from the time you start making it to the the time it is actually ready to eat please allow roughly 2.5 hrs. Alright here we go.

INGREDIENTS

For the brownie base:

  • 1 cup of coconut flour

  • 1 cup of cocoa powder (or cacao)

  • 250g cashew or almond butter

  • 1/2 cup pure maple syrup or rice malt syrup

  • 1 large sweet potato, mashed without skin

  • 1 tbs almond milk

  • 1/4 cup coconut oil, melted

  • Few pinches salt

For the toping – optional

  • 1/4 cup coconut oil, melted

  • 1/4 cup of cocoa powder

  • 1 tbs maple syrup

  • Crushed nuts

METHOD

  1. For the brownie base you can begin by lining some tin foil and making sure the sides are very well covered.

  2. Mash the sweet potato if not done already. You can either bake or boil the sweet potato and then scoop the inside out. I cut them in half and boiled them quicker this way.

  3. Sift the coconut flour and cocoa powder in to a mixing bowl.

  4. Add all of the other ingredients and combine well using a wooden spoon. Eventually I had to use my hands as the mixture is thick and rich, get stuck right in there guys ;)

  5. You should be left with a dough-like mixture. If too dry add a little more almond milk. If too wet then add coconut flour.

  6. Scoop the mix in to your ready prepared baking tin, pressing down firmly so all of the edges are pressed in nice and tight.

  7. Place in the fridge to firm-up for at least an hour.

  8. For the chocolate topping I went nice and simple and mixed in the 1/4 of cocoa powder with the 1/4 of coconut oil.

  9. Pour the chocolate mixture on to the brownie base maxing sure its evenly spread. This will set right away so make sure to sparkle the nuts on top straight away so they stick to the chocolate.

  10. Place back in the fridge for at least 1 more hour before cutting and serving.
